My Favorite Snack Dip

I cook a lot.  I’m sure many of us have been cooking a lot more often than ever before this past year.  In fact, I think it’s safe to say this year gives a whole new meaning to cooking A LOT.  The thing with a lot of cooking at home is that it’s easy to get in a cooking rut especially when creative head space is being used primarily to just get through the busy day.  So I’d like to offer you a quick little snack recipe I go to when I’m in a food rut or want something light and easy yet substantial without being heavy so that I feel like I actually ate something.  


Artichoke Dip

Ingredients:

1 - 14 oz can of artichoke hearts, drained

¼ C extra virgin olive oil

1 T fresh lemon juice

1 T of fresh cilantro or 1 t of dried cilantro

½ t of kosher salt

1 t of mushroom powder (optional) 


Place all the ingredients in a small food processor or process with an immersion blender until smooth.  This should take about 1 minute.  


Enjoy with your favorite crunchy veggie.
